Ever since living in Taipei, I have been monstrously pining for beef noodle soup. Over casual conversation at a cafe in Langkawi, a friend mentioned that there was a seriously delicious spot 40 minutes drive in the middle of nowhere. Guess what I did the very next day? Yes.
I arrived as the sun was at it's peak, and the thought of hot soup was a distant thought, but the need to conquer my hunger was stronger than the sun, and in I went and ordered. A kind woman smiled and took my order. I waited. The bowl arrived. I sipped. I swooned. I added the chili paste. I tasted. I burned. I added more. I punished myself. I liked it. I finished the bowl. I paid. I started my scooter. I drove off, not knowing where I was headed, and not really caring either way.
That was a good bowl of beef noodle soup.
These recommendations are just personal opinions based on my palate, things change, chefs get fired or replaced, places open-close, relocate, so take it all with a pinch of MSG and discover your own gems too. But please do try a few of these, they have been researched exhaustively.
